Grilled Nectarine, Heritage Tomato and Mozzarella Salad

A summer BBQ recipe bursting with fruity flavours. Who said fruit is just for pudding!

 

INGREDIENTS

750g heritage tomatoes

1 x bunch of basil, shredded

2 x nectarines, halved and cut into three

1 x mozzarella ball

Balsamic vinegar

Extra virgin olive oil

Salt and pepper

METHOD

Slice nectarines in half. Slice each half into three.

Heat griddle/BBQ. When hot, sear nectarines for 2 mins on each side until marks appear. If you don’t have a BBQ or griddle, roasting them in the oven works just as well.

Cut the tomatoes into chunks and shred the basil leaves. Mix together in a bowl with the nectarine slices.

Tear the mozzarella ball and scatter over the salad.

Drizzle extra virgin olive oil and balsamic vinegar over the top and season to taste.
