Kale, Chilli and Walnut Pasta Salad
A comforting pasta salad perfect for a quick lunch filled with walnuts and in-season kale.
INGREDIENTS
240g of pasta (Fusillioni holds the sauce well)
1 large bag of kale, de-stalked
A handful of walnuts, chopped
2 red chillis, de-seeded and finely sliced
Parmesan shavings (to taste)
Extra Virgin olive oil
Salt & pepper
METHOD
Place a large pan of salted water on to boil and Pre-heat the oven to 150C.
Once boiling cook the pasta according to packet instructions and drain.
Take the woody stalk out of the kale and roughly chop.
Place into a roasting dish and season with salt, pepper, and olive oil. Place into the oven for approx. 10 mins until softened.
Meanwhile, slice the chilli in half and deseed. Finely slice and place into a frying pan. Roughly chop the walnuts and put into the same pan. Generously drizzle the two ingredients with Ex-Virgin olive oil (be liberal as this forms the sauce for the pasta!) Gently fry the chilli and walnuts until the chillis have softened and the oil turns a deep red from the chillis (be careful not to burn the walnuts or chill).
Drain the pasta and mix all the ingredients together in one bowl.
Now plate up and enjoy!
